Have received a few requests for the scrummy Cookie recipe I made at the weekend, so here goes! Please enjoy and remember that Cookie making is not an art, it is a roll of the dice, lady luck, fate smiling upon you deal ;) In other words, be prepared for failure and then you will be pleasantly surprised with however your Cookie's turn out.
Ingredients
- 125g Cooking Spread (stork or similar)
- 175g caster sugar (or caster sugar/granulated sugar combination if you've run low like me)
- few drops of vanilla extract
- 1 egg (beaten)
- 50g milk chocolate
- 50g plain chocolate
- 75g white chocolate
- 175g plain flour
- pinch of baking powder
- 2 heaped teaspoon of cocoa or good quality drinking chocolate
With Regards to chocolate, I used Tesco value bars as they are a bargain at 30p a bar!
Method
- Preheat the oven to 185 C (170 C for fan assisted ovens) and line a baking tray with baking paper/ parchment paper.
- Using a hand whisk cream the sugar and butter together until light and fluffy
- Add the cocoa powder/drinking chocolate and whisk until thoroughly mixed
- Break the egg into a cup and beat, add a few drops of vanilla essence/extract
- Add the egg mixture into the creamed butter - if it looks like it is going to split add a table spoon of flour.
- Whisk until thoroughly combined
- Break all chocolate into small chunks and place in a sandwich bag. Bash into smaller pieces with a rolling pin (or other heavy object)
- Add the broken chocolate to the butter/sugar/egg mixture and stir in with a large metal spoon
- Sieve the flour and baking powder and add a little at a time to the mixture
- Fold in flour until a soft dough is formed - this will be super sticky
- Take a large tablespoon of the mix and roll it into a ball with your hands, place on the baking paper with at least 8 cms space around
- Once you have used up all the mixture (I made 13 from the mix) flatten each ball down with the back of a spoon - they should be approximately 2cms thick
- Place the baking trays in the fridge for about 30 minutes
- Place in the oven and bake for 12 minutes, make sure you watch them after 10 as they can burn really quickly
- Remove from the oven and leave to cool on the tray for 5 minutes - turn off the oven
- Carefully transfer to a wire rack and place them back in the bottom of the oven (which should have been turned off 5 minutes before) leave for 5 minutes
- Remove and allow to cool on the rack completely
If the stars are in alignment you should have achieved a heavenly Cookie that is crisp on the outside but soft and chewy in the middle!
